令和3年12月、函館市に54年ぶりに誕生した酒蔵「五稜乃蔵」。地元・亀尾町産をはじめとする厳選した北海道産の酒造好適米と、函館の水を用い、小仕込みにこだわった酒造りを行っています。一本一本のもろみと丁寧に向き合い、高品質な日本酒を生み出す新たな挑戦。今回は、醸造の様子を間近に見ることができる直営ショップにお邪魔し、酒造りへの想い、そしてこの土地で酒蔵を立ち上げた理由を伺いました。さらに、地元学生とのコラボレーションを通じて、地域とともに未来へ歩む五稜乃蔵の取り組みにも注目。“今”の函館から生まれる、新しい酒蔵のかたちをお届けします。
