We investigate the mental health benefits of being out in nature and the physical health benefits of knowing exactly, like to the exact inch of earth, where your food comes from. Nico and Fred are the perfect couple to bring this idea to life. Fred is a genius, in the truest sense. He has an encyclopedic knowledge of food and plants and that ecosystem but also the creativity to make something amazing out of nothing. And Nico, a comedian and writer who has had his fair share of mental health, issues brings a levity and normality to proceedings. His most frequent question probably being, “Is that going to kill me?” Our audience is anyone interested in food, foraging, nature and creativity. We think it’s a wonderful show.     This hearty and fun episode was recorded in February 2025 when Fred took Nico exploring unbelievably close to his home to demonstrate how some amazing Wild ingredients can be found right on our doorsteps.

    They needed to find a good haul of Three Cornered Leek (a wildly abundant and invasive Allium) and some Jelly Ear mushrooms for a rather fancy idea Fred had to make a serving of Dim-Sum based around a ‘Turnip Cake’ recipe that Nico hopes tastes nicer than it sounds. How about a little faith Nico? Hmm?

  • Episode 2: Hedgerow Katsu Curry?!

    This inspiring and fascinating episode was recorded in September 2024 when Fred took Nico to an unassuming hedgerow along a path above Hasting to look for the wild spices and seeds that he promised to turn into a Katsu Curry Sauce, which Fred planned to serve on a breaded Chicken of The Woods mushroom, flattened into a Schnitzel.

    Once again Fred’s incredible knowledge about the intriguing universe of Wild ingredients and the natural world in general make for an eye-opening, educational walk for Nico (When he manages to shut up and listen).

    But can FRED really deliver the taste of Katsu and not some vague approximation of curry? Nico is not so sure….

  • Episode 1: Wild Mushrooms on Pumpkin Seed Sourdough

    Welcome to the first ever episode of The Wild Lunch Podcast!

    This fun and fact-filled episode was recorded in mid-October 2024 when Fred and Nico explored some beautiful ancient woodlands near Rye looking for a bounty of top quality wild Mushrooms to serve fried simply with oil and seasoned with Fred’s own fermented mushroom seasoning (what Fred calls, his Umami Bomb) on a batch of his delicious home-made pumpkin seed rye sourdough.

    Hunting in the forest for mushrooms with Fred is exciting enough for Nico because he knows he is in guaranteed a Chef-level Wild Lunch at the end. But what makes it extra special is Fred’s incredible knowledge about mushrooms of all kinds (yes even those ones) from the biology to the folklore surrounding them. Nico finds it all so fascinating he almost forgets to drop a few of his legendary dad-jokes. Almost.

    If you are looking to elevate a plate of mushrooms on toast, to the level of comforting, and educational entertainment, Fred and Nico are the guys for you. Happy listening.
