Se in genere si fatica a riconoscere l’origine americana di molti cibi della nostra tavola, come patate, mais e pomodori, ancor più difficilmente si associano questi cibi alle loro originarie forme di preparazione e alle antiche culture alimentari di cui fecero parte.
