Ian Purkayastha started foraging for wild mushrooms in his native small town of Fayetteville, Arkansas when he was 15. After tasting his first truffle and becoming completely obsessed, Ian found his way to New York to eventually create Regalis Foods. Regalis is a specialty foods company based in Brooklyn, New York that works with 300 restaurants nation-wide with an emphasis on truffles, wild foraged edibles, and caviar. Ian continues to travel the world in search of unique hard-to-find ingredients.
