All of the participating chefs are in the top tier of international cuisine, ranked on the Top 100 list by The World’s 50 Best Restaurants, representing restaurants from 26 countries & 6 continents. Shari was thrilled to attend this inaugural event, which included Talks at Spora – a global food research center founded by Rasmus Munk in 2023; & the Convergence Symposium at DR Koncerthuset, exploring the intersection of gastronomy, art, & culture.

    Shari's 1st guest is Neil Perry, Australian chef, restaurateur, author, & TV personality based in Sydney, Australia, who participated in CONVERGENCE & was Guest of Honor at the dinner that Shari attended. Neil is a culinary icon who changed the way Australians – & the world – see Australian cuisine. He was awarded the Woodford Reserve Icon Award at The World’s 50 Best Restaurants 2024, & is responsible for era-defining Australian restaurants, including Bluewater Grill, Rockpool, Rockpool Bar and Grill, Spice Temple, & now Margaret, ranked No. 2 on the World's 101 Best Steak Restaurants, & No. 1 in Australia 2026.     Today on our episode #435 of All in the Industry, Shari Bayer has a special “On the Road” show, which is the last part of our three episode series on Ein Prosit 2025, an extraordinary multi-day event that took place from October 15-20, 2025 in Udine, Italy, featuring some of the greatest Italian & worldwide chefs. This was Ein Prosit's 26th edition, which included outstanding collaboration dinners, tastings, food trucks and more, bringing together the hospitality community.

    Shari's guests are Chef Patron Norbert Niederkofler and Executive Chef Mauro Siega of Atelier Moessmer Norbert Niederkofler, a 3 Michelin star and green star restaurant, currently #20 on The World’s 50 Best Restaurants, located in the small town of Brunico, Italy, between the Alps and the Dolomites, where we recorded this interview after an outstanding lunch on their beautiful property. As we discuss, Norbert’s ‘cook the mountain’ philosophy, using only hyper-local Tyrolean terroir ingredients, drives every aspect of the restaurant’s sustainability-forward culinary narrative. He believes in inspiring the world with the spark of ethical cuisine, in order to change the way we eat, collaborate and live; and collaborates on this mission with his team, including Mauro, and Restaurant Manager and Wine Director Lukas Gerges.     During the event, Shari sat down with the following participating chefs to talk about their culinary backgrounds & experiences at Ein Prosit:

    Eric Robertson, Canadian co-chef & co-owner of Restaurant Pearl Morissette, a two Michelin star restaurant, which he opened with chef Daniel Hadida in 2017 in the Niagara region of Southern Ontario, offering an ambitious fine dining experience. Known for its farm-to-table philosophy, the restaurant is highly celebrated for its seasonal tasting menus & onsite regenerative farming, earning accolades, including a Michelin Green Star, #3 on the inaugural North America's 50 Best Restaurants 2025, & #1 on Canada's 100 Best 2025. The property also includes RPM Bakehouse, Cafe & Shop, & Winery. (5:58) And,

    Diego Rossi, chef & co-owner of Trippa Milano in Milan, Italy, an acclaimed Milanese trattoria, which he established in 2015 with his business partner Pietro Caroli. Known for modernizing traditional Italian offal-based dishes, Diego blends fine-dining techniques with casual, sustainable, & ingredient-focused cooking. As its name suggests, the restaurant always has its eponymous tripe on the menu, along with a seasonal dishes focused on the Lombardy region. (36:08)

    Today's show features the following chefs who participated in Ein Prosit, who Shari sat down with during the event to chat about their culinary backgrounds & experiences:

    Willem Hiele, chef & owner of Restaurant Willem Hiele in Oudenburg, Belgium, a one Michelin star restaurant, which is currently #62 on The World's 50 Best Restaurants and has received 2 Knives from The Best Chef Awards. Willem is a self-taught, Belgian chef whose cooking is deeply rooted in the North Sea & the coastal landscapes surrounding Belgium. His restaurant's seafood-driven cuisine takes center stage with a daily changing menu that is attuned to the rhythms of the sea & the seasons. (9:30) And,

    Mattia Agazzi, formerly executive chef of Gucci Osteria da Massimo Bottura in Beverly Hills, Los Angeles, CA, which was part of a series of contemporary restaurants under the Gucci Osteria umbrella, promoting modern Italian cuisine while embracing Californian ingredients. The one Michelin star restaurant, which has closed since the event, was led by Mattia under the guidance of Massimo Bottura of three Michelin star Osteria Francescana in Modena, Italy, who also participated in Ein Prosit. Although it has closed, other Gucci Osteria locations are still open in Florence, Italy; Tokyo, Japan; and Seoul, Korea. We look forward to seeing what Mattia does next! (37:03)
